The grapes for this Girard Brut Sparkling wine were harvested in the cool early morning hours to preserve the delicate flavors and vibrant acidity. The fruit was then gently whole-cluster pressed and select press cuts for the cuvée and taille were allowed to settle and clarify before fermentation. The secondary fermentation was carried out in bottle according to the traditional techniques of Méthode Champenoise. The wine was aged en tirage (on lees in the bottle) for a full 24 months to develop yeasty, brioche character and full-palate richness. The sediment was then removed by disgorgement and the bottles topped with the liqueur d’expédition of reserve wine and a dosage of 9 g/L for a smooth finish.
This wine is a blend of Pinot Noir and Chardonnay. The Pinot Noir adds structure, acidity, and delicate red fruit aromas as well as subtle perfume. Pinot Noir is renowned for its ability to enhance a cuvée’s complexity and balance. By contrast, Chardonnay’s bright zesty acidity lends freshness, and delicate floral and stone fruit aromas to the nose. On the palate, Chardonnay tends to add richness and a creaminess, enhancing the elegance and finish of the wine.

Delicate gold color with vibrant glints in the glass, this Brut sparkling wine opens with lively bubbles and zesty acidity.
